Ingredients

For the sopa:

  • 1 yellow onion, diced
  • 1 can (796 mL) whole Italian tomatoes with juice
  • 500 mL (2 cups) The Original® fondue broth
  • 500 mL (2 cups) water
  • 15 mL (1 tbsp) chili powder (optional)
  • Salt and freshly ground pepper

Toppings:

  • 125 mL (½ cup) grated Tex Mex cheese
  • Thinly sliced fried tortilla strips, to taste

Directions

  1. In a saucepan, simmer all soup ingredients for 10 minutes.
  2. Remove from heat and using a hand-held blender, blend to a smooth purée.
  3. Pour soup into bowls, top with cheese and tortillas and serve immediately.
  4. For a hearty meal version, add cooked shredded chicken.
