Borscht-inspired Soup
Ingredients
30 mL (2 tbsp) olive oil
3 large beets, cooked, peeled and cubed
2 cloves garlic, chopped
500 mL (2 cups) Canton® Beef-Onion broth
500 mL (2 cups) water
Salt and freshly ground pepper
Topping:
60 mL (¼ cup) fresh dill, chopped
Directions
- In a large saucepan, heat oil over medium-high heat and sauté beets and garlic for 2 minutes.
- Add Canton® broth and water, then simmer 10 minutes. Season with salt and pepper to taste.
- Using a hand-held blender, blend until smooth. Pour into bowls and garnish with dill.
