Soup
SOPA DE TORTILLAS
Ingredients
For the sopa:
- 1 yellow onion, diced
- 1 can (796 mL) whole Italian tomatoes with juice
- 500 mL (2 cups) The Original® fondue broth
- 500 mL (2 cups) water
- 15 mL (1 tbsp) chili powder (optional)
- Salt and freshly ground pepper
Toppings:
- 125 mL (½ cup) grated Tex Mex cheese
- Thinly sliced fried tortilla strips, to taste
Directions
- In a saucepan, simmer all soup ingredients for 10 minutes.
- Remove from heat and using a hand-held blender, blend to a smooth purée.
- Pour soup into bowls, top with cheese and tortillas and serve immediately.
- For a hearty meal version, add cooked shredded chicken.
