LIME-GINGER BBQ CHICKEN WINGS

Ingredients

375 mL (1 1/2 cups) Sesame-Ginger Broth
2 kg (4 lb) chicken wings
80 mL (⅓ cup) honey
60 mL (1/4 cup) soy sauce
30 mL (2 tbsp) hoisin sauce
15 mL (1 tbsp) fresh grated ginger
Zest and juice of 1 lime
60 mL (1/4 cup) cilantro, chopped

Directions

  1. In a large airtight container, pour in Canton® broth, honey, soy sauce, hoisin sauce, ginger, and lime zest and juice.
  2. Place chicken wings in marinade. Mix well, cover and chill from 12 to 24 hours.
  3. Drain meat, reserving marinade in a pot.
  4. Simmer marinade for 10 minutes.
  5. Preheat barbecue on High.
  6. When barbecue grill is very hot, arrange chicken wings on top and reduce heat to medium-low. Grill around 15 minutes or until well-cooked. During cooking, baste 3 times with hot marinade.
  7. Remove from grill, garnish with cilantro and serve.

Chef's tip

Hands-on supervision during cooking is needed because sweet ingredients in the marinade could flame quickly, blackening the skin while the chicken remains under-cooked.
