Stuffed potatoes with 3 Pepper sauce

Ingredients

  • 4 large washed potatoes
  • 4 slices bacon, raw

Toppings:

  • 2 green onions, chopped
  • 1 cup cheddar cheese, grated
  • Salt and freshly ground pepper
  • Canton® 3 Pepper sauce

Directions

  1. Preheat barbecue to high.
  2. Wrap potatoes in foil individually. Cook on barbecue for 30 to 40 minutes or until tender (or 45 minutes to 1 hour if cooking in the embers). Cool.
  3. Meanwhile, grill bacon slices for 2 to 3 minutes per side; drain on paper towel and chop.
  4. Slice off the top of potatoes. Remove flesh, leaving 1 cm around skin.
  5. In a bowl, crush potato flesh and mix with bacon, onions, and cheese. Add a little salt and pepper only.
  6. Stuff potatoes generously and wrap in foil again.
  7. In the embers, warm potatoes for about 20 minutes or until they are hot, and cheese is melted.
  8. Unwrap and serve with 3 Pepper sauce.
