Hearty Enchilada-style Soup
Ingredients
30 mL (2 tbsp) olive oil
450 g (1 lb) ground beef
2 cloves garlic, chopped
1 can (540 mL) crushed tomatoes
250 mL (1 cup) Canton® Beef-Onion broth
500 mL (2 cups) water
30 mL (1 tbsp) chipotle pepper (optional)
250 mL (1 cup) sour cream
Directions
- In a saucepan, heat olive oil and cook ground beef 5 minutes (or until lightly browned).
- Add in all the ingredients (except sour cream) to the pan.
- Stir and simmer over low heat about 15 minutes.
- Serve in bowls with a dollop of sour cream in the middle.
