Stuffed potatoes with 3 Pepper sauce
Ingredients
- 4 large washed potatoes
- 4 slices bacon, raw
Toppings:
- 2 green onions, chopped
- 1 cup cheddar cheese, grated
- Salt and freshly ground pepper
- Canton® 3 Pepper sauce
Directions
- Preheat barbecue to high.
- Wrap potatoes in foil individually. Cook on barbecue for 30 to 40 minutes or until tender (or 45 minutes to 1 hour if cooking in the embers). Cool.
- Meanwhile, grill bacon slices for 2 to 3 minutes per side; drain on paper towel and chop.
- Slice off the top of potatoes. Remove flesh, leaving 1 cm around skin.
- In a bowl, crush potato flesh and mix with bacon, onions, and cheese. Add a little salt and pepper only.
- Stuff potatoes generously and wrap in foil again.
- In the embers, warm potatoes for about 20 minutes or until they are hot, and cheese is melted.
- Unwrap and serve with 3 Pepper sauce.
