Green lentil and chorizo soup
Ingredients
- 2 tbsp. olive oil
- ¾ cup chorizo, cubed
- ½ lb boneless chicken, diced
- 1 onion, finely diced
- 2 small carrots, finely diced
- 2 garlic cloves, minced
- 1½ cups green lentils
- 1 cup canned crushed tomatoes
- 2 cups unsalted vegetable broth
- 2 cups water
- 2 cups Canton Original fondue broth
- 2 tbsp. chopped fresh thyme
- Salt and freshly ground pepper
Topping:
- ½ cup parsley, chopped
- Juice of 2 lemons
- Toasted bread (optional)
Directions
- In a large saucepan, brown chorizo and chicken in oil. Set aside on paper towels.
- In the same saucepan, sauté onion, carrots, and garlic until tender.
- Pour in remaining ingredients, mix, bring to a boil, lower heat, cover, and simmer for about 40 minutes or until lentils are tender. 10 minutes before the end, add chicken and chorizo. Set aside.
- Serve in bowls with a dash of lemon juice and chopped parsley.
- Serve with bread.
