Ingredients

  • 2 tbsp. olive oil
  • ¾ cup chorizo, cubed
  • ½ lb boneless chicken, diced
  • 1 onion, finely diced
  • 2 small carrots, finely diced
  • 2 garlic cloves, minced
  • 1½ cups green lentils
  • 1 cup canned crushed tomatoes
  • 2 cups unsalted vegetable broth
  • 2 cups water
  • 2 cups Canton Original fondue broth
  • 2 tbsp. chopped fresh thyme
  • Salt and freshly ground pepper

Topping:

  • ½ cup parsley, chopped
  • Juice of 2 lemons
  • Toasted bread (optional)

Directions

  1. In a large saucepan, brown chorizo and chicken in oil. Set aside on paper towels.
  2. In the same saucepan, sauté onion, carrots, and garlic until tender.
  3. Pour in remaining ingredients, mix, bring to a boil, lower heat, cover, and simmer for about 40 minutes or until lentils are tender. 10 minutes before the end, add chicken and chorizo. Set aside.
  4. Serve in bowls with a dash of lemon juice and chopped parsley.
  5. Serve with bread.
